Today I went on an adventure – and it took me to Lotte Market in Chantilly Virginia. Lotte is an international food market specializing in Asian, Indian and Mexican food. I was told to go and check out the vast array of inexpensive produce both exotic and familiar. Unbelievable is all I can say. They have bins of beautiful winter greens such as bok choy, kale and watercress next to stacks of Chinese eggplant and sweet potatoes. The variety is endless and with many choices costing less than a dollar a pound, go ahead and take it home and experiment. If your vegetable routine is in a rut, this place will jump-start you into new territory. I bought home the Chinese eggplant, mini sweet potatoes and baby bok choy – I will roast the eggplant with some oil (375 degrees, cut into 1 inch pieces, do not peel) and put it on top of my salad with feta cheese. The potatoes I will roast as well and throw them into my lunch box – the bok choy I will stir fry and add my celery, carrot, onion, red pepper mixture (see post). They carry any noodle, grain, sauce, meat or seafood you can imagine, too vast to list, you just have to experience it for yourself. Have fun, I sure did!
